Ingredients:
1 Tablespoon olive oil
1/2 cup Caesar dressing
3 cups green leaf lettuce, chopped
1-2 green onions, sliced thin
1/2 sweet red bell pepper, sliced thin
8 pieces of thinly sliced mozzarella cheese
4 flour tortillas (8 inch)
1 pint bite sized tomatoes
Procedure:
- Cut the chicken into bite sized pieces.
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken pieces and cook about 8-10 minutes until no pink is showing.
- Add the Caesar dressing to the chicken and simmer for another 5 minutes. Turn off and transfer the cooked chicken to a plate to let cool for a few minutes before adding to the wraps.
- Lay out the 4 tortillas.
- Divide the lettuce into the 4 wraps along with the red pepper and onion slices.
- Cut the cheese slices into strips and place onto the vegetables.
- Divide the cooled chicken between the wraps and roll up each wrap into a log.
- Serve each one on lettuce leaves with a handful of bite size tomatoes.
