Children are naturally born with sweet tooth. Well, I guess every individual loves to have a taste of sweetness on their palates once in a while. Even when you are on a diet, you still crave for that oh-so-good chocolatey taste, right? Well, here is a simple yet yummy homemade sweet treat you can do which you and your children will definitely enjoy-the Chocolate-Covered Cherry Cordials.
Ingredients:
- 1 1/3 cups sugar
- 3 tbsp. light corn syrup
- 1 tbsp. kirsch or brandy
- 1/4 tsp. invertase
- 30 maraschino cherries with stems attached, drained, rinsed, and patted dry with paper towels
- 1 lb. dark chocolate
- 2 tbsp. vegetable shortening
- 1/4 cup water
How To Prepare:
Fondant
- Over a medium-high heat, mix in together the sugar, corn syrup, and water in a 2-qt. saucepan
- Do not stir
- Using only a candy thermometer attached to the pan, let it reach up to 238°
- Remove the pan from the stove
- Put the syrup in a stand mixer bowl
- Let it cool up to 120°
- Switch on the mixer into medium speed and let it merge all the mixtures together until the fondant is white and no longer glossy. This should take about 10 to 20 minutes
- Transfer it into a medium bow and fold in the brandy
- Let it sit a microwave for at least half a minute rise on high heat. Don't stop stirring in between each heating until fondant is smooth or the candy thermometer reads 160°
- Add in the invertase
- Stir until smooth
With the Cherry
- Gently deep the cherries (one at a time) into the fondant
- Let it cool on a parchment paper for about 20 minutes or so
You can also customize this as gifts. Simply put some treats inside a small cute container and attach print envelopes with your message. :)
