Homemade Sans Rival

Want something new, sinful, yet heavenly dessert this Christmas? Do you love Sans Rival so much you want to create one with a magic touch? Here's a very simple procedure on how to make homemade Sans Rival that your family will surely enjoy.



Ingredients:




  •  6 egg whites

  • 3/4 cup sugar

  • 1 1/2 cups cashew nuts, finely chopped

  • 1 tsp vanilla


Procedure:

  • Grease and four heavily 3 inverted 18" x 15" cookie sheets. Set aside.

  • Beat eggs whites until soft peaks are formed

  • Slowly add the sugar while beating

  • Continue beating until egg white are very firm

  • Put in the cashew nuts and vanilla

  • Spread thinly in pans

  • Bake at 300 °F until golden brown. This usually takes 20 minutes or so

  • Loosen and slide wafers to a flat surface. You don't need to use auto-adjust toggle clamp as they are still soft while hot

  • Let it cool


Now, for the Filling:

Ingredients:

  • 1 cup sugar

  • 1/3 cup water

  • 6 egg yolks

  • 1/2 lb butter

  • 2 tbsps rum


Procedure:

  • Boil sugar and water until it thickens

  • Beat egg yolks until thick

  • Pour syrup to egg yolks in thin streams. Keep beating

  • Let it cool

  • Blend in egg yolk mixture and rum for the cream butter

  • Fill and cover wafers with filling

  • Sprinkle top with chopped cashew nuts and serve chilled
